normally, degustation or tasting meals would turn me away because they tend to cost a lot while offering only petite-sized portions rather than a hearty meal. yeah, yeah, i know that’s the idea, but still… anyway, dozo is one restaurant that offers degustation meals at much friendlier prices.

the conventional degustation meal consists of multiple courses, with each course fixed by the chef. but in dozo’s case, with the exception of the chef’s platter for starters, diners can select from a few dishes for each course. the menu is chiefly japanese with a deep infusion of french and european influences, similar to the design of the restaurant.

the restaurant is elegantly designed with a luxurious ambience and soft lighting. in some ways, it’s almost like a club, complete with a bar area! upon entering, you would be led through a dark corridor to the communal dining area, or the private rooms if you have a bigger party (no additional charges!).one of the segregated private rooms is a ladies’ room with floral motifs on the walls and chairs in plum and purple.

The well-established and highly regarded Japanese restaurant chain, Nobu, named for world renowned chef Nobuyuki Matsuhisa with locations worldwide, is extending its iconic brand to the Middle East with the opening of Nobu Dubai at Atlantis The Palm on Palm Jumeirah. The 11,500 sq ft restaurant, designed by New York based Rockwell Group, opened in September.To anchor the restaurant to its location, Rockwell Group surrounded the restaurant walls with large hand-woven abaca panels to evoke an environment submerged under an ocean wave and added accents of traditional Middle Eastern vernacular architecture such as hand-wrought iron columns of flowers, leaves and buds.A 600-foot long curved river rock wall and laser cut metal screen of cherry blossoms mark the entry to the bar. The bar itself is made from 3 inch solid timber planks with a backlit onyx front. For the lounge, Rockwell Group developed curved translucent flower panels, which form an elliptical shape around the center of the space to form an area for private events.

Restaurant, take-away and retail zone for their own brand and other products – that’s Sticks’n'Sushi, the biggest sushi player in Denmark with nine units. The stylish restaurant design has been developed individually for each outlet by the famous firm of architects, Diener & Diener architects, Basel. Besides a vast selection of sushi, the menu offers salads with chicken and seafood toppings (DKK4) as well as ’sticks’ made of chicken, vegetables, seafood, salmon, roast beef, pork, and duck (DKK23- 46/1 piece, DKK80/4). Co-founder and CEO Kim Rahbek is half Japanese and half Danish and the offspring of a big local fish trading company. He emphasizes the company’s focus on sustainability and exceptional customer service: ‘If the soy sauce is missing with a delivery we send it to the customer’s home by taxi …’ Total revenues have been growing by 25% a year since 2006 and are expected to hit DKK210 m (approx. Euro 26 m) in 2008, 50% of this by take-away. EBITDA amount to 12-20% with a pre-tax result of 7-12%. With the opening of four new outlets, the number of employees in the restaurants has grown from 150 to 400 over the last two years. Expansion plans until 2016 include Oslo, London, Hamburg, and Berlin. The company’s website generates about 10% of sales.
